The Companies section in the Project Settings dropdown allows a User to add one or many Companies that are part of the Project.  To access Companies, in the Project dropdown menu go to Project Settings, then, under Organization, select Companies as shown below.

This will open the Manage Companies window, where you can Add, Edit, Deactivate, and Delete Companies.
